I'd try to go in May for fewer people, though peak season is July and August. Sone coastal towns start gearing up a bit in May but definitely not crowded. Plus May is sublimely lush and beautiful. It has everything you could wish for, especially for kids, including the only amuzement park, plus a brand new Aquapark. Day 1 - Fly from Amsterdam (doing our jet lag days there) to Dubrovnik arriving at noon, and drive to Cavtat. Spend the afternoon checking out the town and dinner. There are filming locations scattered around Croatia ( Split area, Sibenik etc) but Dubrovnik (and surrounds) were the main sets.

When you are docked in ports, sea is calm, but in popular ports, there is a lot of traffic, other boats make small waves.
