The thing is the veteran crossbowmen seem to have nearly as good of defense with the shields and way better lethality with the brutal crossbows. And of course banner knights are banner knights. Is it worth having 20% of my army as infantry or really just keep it to Cav and crossbows?

Mameluke tier has some great skirmishers. Master archers are decent. Palace guards are hard to train but they are versatile. Not the best troop tree but nice and reliable backups. Javelins are very good in Bannerlord and most of your infantry get them. They melt opposition as long as they don't have a shield.
