The worst feature of the AI Minotaur is it will actually destroy things you want to gather as it jumps to keep in front of you. Bring up your 'summon/recharge/change multi-tool/etc.' menu, letter X by default on PC, scroll all the way left to the gear icon, and in that submenu will be an option to disable the Minotaur AI. It instantly goes dormant. You can still enter and use it, but even after doing that, it will stay where you leave it.
