X2, that problem is typically caused by a bad fan clutch causing the fan to not pull enough air through the radiator when you're idling/sitting still. Driving forces air through the radiator which is why yours is not overheating while driving.

It starts again and after sitting about 5-10 minutes and seems to drive fine otherwise. No lights go off, it just dies and I loose power steering.

Start as instructed above and see where you are coming up short. After that, for me, the 'trick' was to: 1) Make sure the coolant overflow bottle is filled to the max level. 2) With the engine cool, top up the radiator with coolant and install the radiator cap. 3) Start the engine. 4) Let the temp get to about 180F - 190F. 5) Shut off the engine and let cool for about 30 minutes.

BUT -- before replacing it - try this - find the sensor, unplug the connector (up top, back of the engine, 2 wires) - spray the connector with a good electrical cleaner, then plug it back in.
