I think dolphin is for plain Wii emulation (and game cube). Cemu is for Wii U. I think breath of the wild is for switch and Wii U so Cemu is your only choice. In most cases Yuzu, but I still use CEMU for BOTW. If you have the horsepower, the Wii U version of the game can be pushed a bit further, runs better and looks better than the Switch version. Still supports gyro controls either way so you can’t lose.
